500 ml water

2 ml salt

375 ml mealie meal

15 ml butter

Bring water and salt to the boil. Add mealie meal and leave in potjie without stirring. With a wooden spoon, use a cuting and not a stirring motion to mix the mealie meal with the water. Cover with lid allow to simmer for 20 minutes or until pap is cooked. Stir at short intervals to prevent pap from scorching and to give it a light texture. Stir in butter and serve with any ptjiekos with a lot of gravy.
