
Chicken a la Tutu
Are you feeding the multitudes this Christmas? Why not try this delicious recipe courtesy of the Leprosy Mission.
The recipe which was a hit with the clergy when their Patron and now Archbishop Emeritus Desmond Tutu entertained his guests at Bishopscourt.
3 potatoes
1 chicken cut inot pieces
75g seasoned flour
30ml (2 Tbsp) vegetable oil
2 onions chopped
1 green pepper sliced
2 large tomatoes, skinned & chopped
400g can tomato puree
15ml curry paste
5ml Tabasco sauce
1 chicken stock cube
600ml water
Boil the potatoes for ten minutes until half cooked. Peel and slice.
Coat chicken in seasoned flour. Heat oil in frying pan and brown
Remove from the pan
Add onions and green pepper and cook until soft
Add 4 to 5 tablespoons of the remaining flour to the pan and cook for 1 minute.
Add tomato puree, curry paste, Tabasco sauce, stock and sufficient water to make a thick sauce
Put the chicken pieces in a large casserole dish, cover with thje sliced potatoes and the vegetables
Cover the casserole and bake at 150 c for an hour.
Serve with rice or pasta and a salad.
